Vinification of the Grapes"},"content":{"rendered":"<p>After collecting the fruits of an entire year, an equally important phase of our work begins: the <strong>vinification of the grapes<\/strong>.<\/p>\n<p>After the gentle pressing process is complete we place the must in steel tanks to ferment at a controlled temperature of (25\u00b0 to 27\u00b0).\u00a0The <strong>fermentation<\/strong> is the first major transformation of the entire wine-making process; a process in which the yeasts interact with sugar, which is slowly converted into alcohol.\u00a0It is at this stage that <strong>the colors are extracted<\/strong> from the skins along with other solid elements that make up the wine.<\/p>\n<p>The length of fermentation depends on the type of wine: a week for <a href=\"https:\/\/cantinaborgogno.com\/en\/wines\/dolcetto-dalba-doc-2014-2\/\">Dolcetto<\/a> and <a href=\"https:\/\/cantinaborgogno.com\/en\/wines\/barbera-dalba-doc-2013\/\">Barbera<\/a> and roughly two weeks for Nebbiolo which will be used to produce the <a href=\"https:\/\/cantinaborgogno.com\/en\/wines\/nebbiolo-langhe-doc-2014\/\">Langhe Nebbiolo<\/a>.\u00a0And finally, the Nebbiolo for <a href=\"https:\/\/cantinaborgogno.com\/en\/wines\/barolo-docg-2011\/\">Barolo<\/a>, which has to ferment for circa 4 weeks.<\/p>\n<p>During these last few days we\u2019ve been working on <strong>racking<\/strong> and <strong>decanting<\/strong> the wine, or rather the separation of the grape marc from the wine.\u00a0The procedure is carried out via considerable decanting from one tank to another and ends with the delicate pressing of the grapes.<\/p>\n<p>What remains of the grape marc will be taken to the distillery to <strong>produce grappa<\/strong>.\u00a0At the end of the alcoholic <strong>fermentation<\/strong>, the <strong>malolactic<\/strong> process begins, whereby malic acid is transformed into lactic acid.<\/p>\n<p>To date this fermentation process was carried out for all our wines, except for a few Nebbiolo tanks where it is still ongoing.<\/p>\n<div class=\"gallery-straight gallery-straight--width-wide gallery-straight--has-caption-false
