Barolo DOCG Castellero

Tasting Notes

The style of our Barolo Castellero (a cru located between the towns of Barolo and Monforte d’Alba) is strictly traditional, featuring fairly long macerations followed by 18 months of ageing in large oak casks of 30 to 50 hectolitres, and an additional six months in bottle before release.

This is a wine that can already be enjoyed a few months after bottling, but it will continue to evolve and develop its elegance over time.

Color: deep garnet ruby red.

Nose: very pleasant and delicate, with notes of dried rose, and hints of licorice and vanilla from the oak.

Taste: velvety, dry, round, rich and well-balanced in both body and structure.

Serving temperature: 16–18 °C.

Food pairings: excellent with risottos, fondue, game, red meats, and meat-based dishes in general (roasted, grilled, or spit-roasted).

Winemaking

Method: the entire making philosophy of our Barolo Castellero is rigorously traditional, with fairly lengthy macerations followed by long maturations of about 18 months in oak barrels. After bottling the wine is aged for at least another 12 months before its release. It can be enjoyed after several months in the bottle, however it will continue improving and developing its elegance over the years.
